Method
 

Preparation
  1. Line a tray or small baking sheet with parchment paper and have a mixing bowl and spoon or spatula ready.
  2. Combine the almond butter, cocoa powder, and honey or maple syrup in the mixing bowl, adding a pinch of sea salt and vanilla if desired.
  3. Fold and press the ingredients together until they form a thick, homogeneous mixture.
Adjust Consistency
  1. If the mixture is too sticky, add 1–2 tablespoons of oats, chia, or ground flaxseed. If too dry, incrementally add honey or maple syrup until pliable.
Shaping
  1. Use a small cookie scoop or roll 1-tablespoon-sized portions into compact balls. Alternatively, press into a lined mini loaf pan.
Chilling
  1. Place the tray in the refrigerator for at least 30 minutes to firm up the bites.
  2. For longer storage, freeze them for 10–15 minutes, then transfer to an airtight container.
Serving
  1. Let frozen bites thaw for a few minutes before serving or keep them chilled.
