Method

Preparation
  1. Preheat your oven to 400°F (200°C) and position a rack in the middle.
  2. Line a baking sheet with parchment paper or use a non-stick baking mat.
  3. Clean your counter or board thoroughly, removing any crumbs from wheat-based baking.
Dough Preparation
  1. Open the package of gluten-free pizza dough. If chilled, let it sit at room temperature for 10 to 15 minutes.
  2. Dust your rolling pin with gluten-free flour and roll the dough into a rectangle or oval about 1/4- to 1/2-inch thick.
  3. Use a lightly oiled spatula to transfer the rolled dough to your prepared sheet.
Garlic-Oil Mixture
  1. In a small bowl, mix the olive oil with the minced garlic, salt, and black pepper.
  2. Brush this mixture over the surface of the dough.
Topping
  1. Evenly sprinkle shredded mozzarella over the dough, then add the grated Parmesan.
Baking
  1. Place the baking sheet in the preheated oven and bake for 12–15 minutes, checking for golden edges and bubbling cheese.
  2. If desired, switch on the broiler for 30–60 seconds for extra browning.
Serving
  1. Remove from the oven and sprinkle with chopped fresh parsley.
  2. Let it rest for 2–3 minutes, then slice and serve warm with pizza sauce.

Notes

Store any unused dough in a separate container in the refrigerator to avoid gluten cross-contact. This garlic bread pairs well with soups or as an appetizer.
