  • 2 tablespoons fresh lemon juice Brightens the olive oil and thyme.

Optional Add-ons
  • 1 medium red onion, cut into chunks Sweetens when charred.
  • bell peppers, cut into chunks Any color is fine.

Method
 

Preparation
  1. Soak wooden or bamboo skewers in water for 20–30 minutes to prevent burning.
  2. Preheat grill or grill pan over medium-high heat.
Make the Lemon-Thyme Marinade
  1. Whisk together olive oil, lemon juice, minced garlic, thyme, honey (if using), salt, and pepper in a small bowl.
  2. Taste and adjust as necessary.
Prepare Ingredients
  1. Cut halloumi into 1-inch cubes. Prepare vegetables and arrange them for easy threading.
Thread the Skewers
  1. Alternate halloumi with lemon wedges, cherry tomatoes, and chosen vegetables on the skewers.
  2. Leave space between pieces for even cooking.
Grill the Skewers
  1. Oil the grill grates and place the skewers on the preheated surface.
  2. Grill 2–3 minutes per side until golden-brown and vegetables are softened.
Finish and Serve
  1. Remove skewers, garnish with thyme sprigs and red pepper flakes if desired.
