  • 1/4 cup honey pure honey; gluten-free
  • 2 tablespoons fresh lime juice freshly squeezed is best
  • 1 teaspoon lime zest for concentrated citrus flavor
  • 2 cloves garlic, minced adds depth to the marinade
  • Salt and freshly ground black pepper, to taste simple seasoning required
  • 1 cup cooked rice white or brown; cooled slightly
  • 1/4 cup chopped cilantro fresh and bright; stirred into the rice
  • 2 ripe avocados, sliced pick slightly soft varieties for creaminess
  • 1 tablespoon extra lime juice for the avocado to keep slices fresh
Optional Add-ons
  • Chili flakes or thinly sliced jalapeños for a friendly kick
  • Fresh lettuce or baby spinach for green and crunch
  • Sweet corn kernels add sweetness; frozen corn is fine

Method
 

Prepare the Marinade
  1. In a medium bowl, whisk together honey, fresh lime juice, lime zest, and minced garlic. Add a pinch of salt and black pepper.
  2. Add the chicken breasts to the marinade and turn to coat. Let rest for at least 20 minutes or up to 1 hour in the fridge.
Cook the Chicken
  1. Heat a skillet over medium heat and add a tablespoon of neutral oil.
  2. Remove chicken from marinade and cook for 5-6 minutes per side until the internal temperature reaches 165°F (74°C).
  3. If desired, pour reserved marinade into the pan to thicken slightly during the last minute or two of cooking.
  4. Remove chicken and let it rest for 5-7 minutes before slicing.
Prepare Lime Cilantro Rice
  1. In a bowl, mix cooked rice with lime juice and chopped cilantro. Add salt to taste.
Prepare the Avocado
  1. Slice avocados and toss with extra lime juice, salt, and pepper.
Assemble the Stacks
  1. Layer rice, chicken, and avocado on plates or use a ring mold for a neat presentation.
  2. Garnish with extra cilantro and optional toppings if desired.
