Preparation
- Gather your essentials: a cutting board, a sharp knife, a skillet for the onions, a second skillet or grill pan for the burgers (or a preheated outdoor grill), a spatula, and a thermometer if you have one.
Caramelize the onions
- Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the thinly sliced onion and stir.
- Keep stirring every few minutes; after about 12–15 minutes they should be soft and golden-brown. Add balsamic vinegar and cook for another 1–2 minutes.
- Set the onions aside in a bowl.
Shape and season the turkey patties
- Place the ground turkey in a mixing bowl. Sprinkle with salt and black pepper.
- Mix gently just until combined; avoid over-mixing. Divide into four equal portions and shape into patties.
Cook the patties
- Preheat a skillet or grill over medium-high heat and brush with oil. Cook the patties for about 5–6 minutes on one side, flip, and cook another 5–6 minutes on the other side.
- Check for doneness (165°F). Reduce heat if necessary.
Melt the provolone
- About 1 minute before the patties are done, place a slice of provolone on each patty to melt.
Toast the buns and assemble
- If using buns, butter or brush the insides and toast them until golden.
- Assemble the burgers with caramelized onions and your favorite toppings.
