Method
 

Preparation
  1. Gather your essentials: a cutting board, a sharp knife, a skillet for the onions, a second skillet or grill pan for the burgers (or a preheated outdoor grill), a spatula, and a thermometer if you have one.
Caramelize the onions
  1. Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the thinly sliced onion and stir.
  2. Keep stirring every few minutes; after about 12–15 minutes they should be soft and golden-brown. Add balsamic vinegar and cook for another 1–2 minutes.
  3. Set the onions aside in a bowl.
Shape and season the turkey patties
  1. Place the ground turkey in a mixing bowl. Sprinkle with salt and black pepper.
  2. Mix gently just until combined; avoid over-mixing. Divide into four equal portions and shape into patties.
Cook the patties
  1. Preheat a skillet or grill over medium-high heat and brush with oil. Cook the patties for about 5–6 minutes on one side, flip, and cook another 5–6 minutes on the other side.
  2. Check for doneness (165°F). Reduce heat if necessary.
Melt the provolone
  1. About 1 minute before the patties are done, place a slice of provolone on each patty to melt.
Toast the buns and assemble
  1. If using buns, butter or brush the insides and toast them until golden.
  2. Assemble the burgers with caramelized onions and your favorite toppings.
