Essentials
  • 1 lb steak (sirloin or tenderloin), cut into bite-sized pieces Choose a well-marbled cut for tenderness.
  • to taste Salt and pepper Simple seasoning goes a long way.
  • 2-3 cloves garlic, minced For a warm, savory base.
  • 2 tablespoons unsalted butter The pan fat that gives the steak a nice sear.
  • ½ cup heavy cream Makes the sauce luxuriously smooth.
  • 1 cup grated Parmesan cheese Freshly grated melts best and tastes brightest.
  • to taste Fresh parsley, chopped For a bright, fresh finish.
Optional Add-ons
  • 1 teaspoon lemon zest Brightens the sauce without adding fuss.
  • 1 teaspoon red pepper flakes For a gentle warmth if you like a little heat.
  • 1-2 teaspoons Dijon mustard Adds depth and a silky tang.
  • 1 tablespoon olive oil If you prefer to blend oil with butter for higher heat tolerance.
  • 1 cup cooked gluten-free pasta or brown rice To serve under the steak bites for a more filling meal.

Method

Preparation
  1. Pat the steak pieces dry with a paper towel to ensure a good sear.
  2. Sprinkle salt and pepper evenly over the steak pieces and toss gently to season.
Cooking
  1. Heat a large skillet over medium-high heat and melt the butter.
  2. Add minced garlic and sauté for 20–30 seconds until fragrant.
  3. Add seasoned steak pieces in a single layer and cook for about 3-4 minutes, flipping as needed until desired doneness.
  4. Transfer the cooked steak to a plate and keep warm.
  5. Reduce heat to medium, pour in heavy cream, and scrape up browned bits from the pan.
  6. Stir in grated Parmesan gradually until melted smoothly into the cream.
  7. Fold in chopped parsley once the cheese is melted and adjust seasoning if needed.
  8. Return steak bites to the pan and gently coat them in the sauce.

Notes

Common mistakes to avoid include overcooking the steak, burning the garlic, and letting the sauce separate. Always monitor heat and stirring while adding cheese to maintain consistency.
