Method
 

Preparation
  1. Peel, core, and dice the pineapple into roughly 1/2-inch pieces.
  2. Grate a tablespoon of fresh ginger using the fine side of a grater.
Cooking
  1. Combine the diced pineapple, grated ginger, brown sugar, and water in a medium saucepan.
  2. Place the saucepan over medium heat, stirring until the brown sugar is fully dissolved.
  3. Bring the mixture to a gentle boil, then lower the heat to let it simmer.
  4. Simmer slowly for about 15–20 minutes, stirring occasionally, until the sauce thickens.
  5. Remove from heat and stir in lime juice and salt.
  6. Add chili flakes, cinnamon, or coconut milk if desired.
  7. Allow to cool slightly before serving.

Notes

Store in an airtight container in the fridge for up to 5 days. Rewarm gently if it thickens.
